I love that video. I need a little hand sickle! I wouldn't prune much beyond the flower stalks at this point because I'd be concerned about stimulating the plant to grow and not harden off enough before frosts. With my own lavender, I clean it up in spring once I'm sure I can identify what has truly died back and then I sheer the flowers once they're spent. Same for my culinary sage.
