Seed Catalogs are coming

Its the time of year when my mail box is filling with seed and plant catalogs, tempting me with all kinds of ideas for what to plant this spring.  When assessing our favorites from the vegetable garden and our less successful attempts, I wish we had more space to dedicate to the vegetables I plan to pickle, can or freeze.  Beets and Cucumbers were our favorite to pickle.  Does anyone have advice on the best cultivars for pickling?

    I'm a big fan of the old variety of cucumber, 'Boston Pickling'! Very productive and the perfect pickle! Not so sure on the beets as I eat them fresh but do like those with colorful foliage like 'Bull's Blood' and 'MacGregor's Favorite'!
