When to harvest carrots?

| Posted in Mid-Atlantic Gardening on

This is my first year growing vegetables and started my first bed with tomatoes, beans, carrots and lettuce. It has been pretty obvious when to harvest my tomatoes, beans, and lettuce but I can’t figure out if my carrots are ready or not. I’ve looked up some tips, but it’s still not super clear. How do you know when to harvest carrots?

You can uncover a bit of the top and have a look to see if it's the desired size. The nice thing about carrots is they're technically always ready as far as taste goes, though if they get too fat, they may be a bit woody. Still good for cooking with! Also, keep in mind that carrot flavor benefits from cold exposure, so if your carrots are still small enough, let them keep going until a frost or two.
